Watermelon & Cucumber Salad
Refresh yourself in this heat and make a summery side dish! Watermelon is the fruit of the summer! I love making this salad that is super easy and is always a crowd pleaser. It’s just enough flavors and crunch for everyone even those who don’t like watermelon as much (like me)! The right amount of salty and sweet pairings make it taste so amazing. I also switch out using basil and mint for this recipe, it’s whatever I’m feeling at the moment. Usually I use mint with it but sometimes I’ll use basil like this time! I also make a unique and special salad dressing of just plain Olive oil, salt and pepper, and good ole lemon juice! Let me know what you think!
This is such a great super easy recipe, perfect to bring to parties, or as an addition to any summer barbecue! Let me know how it tastes and where you’ll be bringing it!
Ingredients
½ of small watermelon chopped into cubes
Salt and pepper to taste
Olive oil (eye it, depends on amount of watermelon and servings you’re making)
½ large cucumber sliced into cubes
Feta cheese crumbles about 1 handful
10 basil/mint leaves
½ Fresh lemon juice
directions
Recipe
- Add watermelon in the base of the bowl.
- Add cucumber on top
- Pour olive oil over watermelon and cucumber
- Add in chopped basil/mint leaves
- Squeeze lemon juice on top of cucumber and watermelon and basil
- Top with feta cheese
- And add Zoe’s Kitchen Season on top (optional)

This is a really interesting recipe because I never thought that watermelon and cucumber would taste good together. they do smell good together (cure my favorite bath and body works lotion from the 90s) but never taste good together. i have to try this.

That salad looks so tasty! It reminds me of the time that someone I knew was saying “uh, why would you put fruit into a salad?” I had great pleasure in pointing out that tomato (a salad staple) is a fruit!
