Have you ever had Mexican Chicken Guajillo?
This recipe I learned from an expensive Hellofresh order but it is super easy to make at home and it takes about all of 10 minutes to do so in addition to cooking some cheesy rice to go on the side which is super easy as well. Here is my version of the Mexican dish that is both satisfying and full of flavor.
Ingredients
1 Pack of Cherry Tomatoes (Sangria Cherry tomatoes if it’s available)
Tomato Puree 1 can
1 Can of Tomato paste
4 Chicken thighs
Salt and Pepper
Side
White Rice
Spinach
White shredded cheese Cotija cheese is preferred but whichever cheese you’d like
Bag of Spinach
1 Lime
2 Avocados sliced
Preparations:
Cook the amount of rice you want usually it’s always double the cup of rice that you want to cook
I used 4 cups of rice and 6 cups of water. I let the rice cook on low medium after the water started boiling so it cooks faster.
Then I prepare the chicken. Dab the chicken dry then put salt and pepper for seasoning on both sides. Pour in some oil whichever you choose I used olive oil. Then I placed the chicken in on medium high for 5 minutes on each side or until cooked evenly browned a little. Once both sides are brown add in the tomatoes and sauce. Stir it around a little and cover it on low heat until it is thicker and creamy.
Back to the rice once it’s done squeeze half of the lime into the rice, add spinach and cheese to the rice stir and let it sit on low to stay warm.
Voila! Your meal is done! Top it off with sliced avocados.
